棋格脆餅

【材 料】

無鹽奶油 180公克
糖粉 130公克
100公克
低筋麵粉 350公克
可可粉 20公克

【做 法】

1 無鹽奶油軟化後,加入過篩的糖粉一起打至鬆發變白。
2 取1顆蛋打散成蛋液,分2~3次加入作法1的材料中攪拌均勻,再加入過篩的低筋麵粉拌勻,即為原味麵糰。
3 將原味麵糰均分為2份麵糰,取其中1份麵糰加入可可粉揉勻成巧克力麵糰。
4 將作法3的原味麵糰和巧克力麵糰分別用桿麵棍桿成長條形,並用保鮮膜裹起來,放入冰箱冷藏至變硬後取出。
5 取另1顆蛋打散成蛋液,在原味麵糰上和巧克力麵糰上刷上蛋液後上下疊在一起,從中間對切後再刷一次蛋液。
6 將對切後的原味麵糰和巧克力麵糰相互交錯疊成棋格狀,並用保鮮膜包裹,放入冰箱冷藏至再次變硬。
7 將冰硬的麵糰取出,撕除保鮮膜後切成約0.5公分厚的長片狀鋪在烤盤上,放入烤箱上層以180℃約烤20分鐘即可。
