花蟹冬粉煲



材料:

花蟹1隻
冬粉2把
薑末10公克
芹菜末20公克

調味料:

A.原味沙茶醬2大匙
太白粉2大匙
B.鮮味雞晶1/4小匙
細糖1/6小匙
米酒1大匙
鹽1/4小匙
水600㏄

作法:

 1.蟹肉洗淨將背殼剝開,殼保留,蟹肉去鰓後切小塊,蟹肉灑上一些乾太白粉(不需全部沾滿)備用。
 2.冬粉泡水約20分鐘後撈起瀝乾備用。
 3.熱油鍋,油溫熱至約180℃,將作法1的蟹肉下油鍋炸約2分鐘至表面酥脆起鍋;再放入蟹殼炸至變紅色起鍋,備用。
 4.作法3鍋中留少許油,以小火爆香薑末及原味沙茶醬,再放入炸過的蟹肉及調味料B拌炒均勻。
 5.待作法4的湯汁沸騰放入作法2的冬粉,以小火煮約1分鐘,撒上芹菜末,熄火。
 6.將作法5的冬粉撈至砂鍋作底,再將蟹肉與作法3的蟹殼擺至冬粉上即可。
