紅豆土司



材料:

中種麵糰:高筋麵粉402公克
速溶酵母5公克
水241公克
主麵糰:高筋麵粉101公克
細砂糖40公克
鹽8公克
奶粉30公克
奶油50公克
水11公克
蛋50公克
改良劑5公克
帶殼蜜紅豆480公克

作法:

 1.速溶酵母加入少許室溫的水溶解;材料A和B的高筋麵粉過篩,備用。
 2.取材料A的高筋麵粉放入容器內後,加入溶解後的速溶酵母和水一齊攪拌至擴展。
 3.將麵糰整型滾圓後,放入鋼盆中做基礎發酵90分鐘,即為中種麵糰。
 4.將材料B(除奶油外)放入攪拌缸中,再把作法3的中種麵糰撕成小塊放入攪拌缸中一起攪拌成麵糰。
 5.在作法4中加入奶油後,攪拌到完成階段。
 6.取作法5的麵糰分割成每份120公克的小麵糰2個,滾圓後鬆弛15分鐘,再用桿麵棍桿成牛舌狀。
 7.將薄麵皮摺成3摺後再用桿麵棍桿開,包入帶殼蜜紅豆後將麵皮捲起來,共製作2捲。
 8.最後將2捲土司放在同一烤模中發酵至模高9分滿後,放入烤箱內以上火160℃、下火210℃烤約35分鐘即可。
