香酥排骨酥



準備材料有:

軟骨排或子排適量

豆油伯金桂醬油2大匙

白胡椒粉1小匙

五香粉1小匙

米酒2大匙

冰糖2.5小匙(家裡冰糖用完,改用砂糖替代)

地瓜粉適量

做法:

將五香粉、白胡椒粉、米酒、冰糖(家裡冰糖用完,改用砂糖替代)、金桂醬油倒入碗裡

將醃料抓均勻後放置約1小時入味

一小時後準備油炸!地瓜粉分兩次下!

第一次先倒入少許的地瓜粉抓一下,讓醬汁整個收起來,地瓜粉反潮,抓到沒有乾粉!

再倒入適量的地瓜粉抓一下,地瓜粉反潮,粉不用太厚~

然後下油鍋囉~(擔心黏底,只要稍微轉動鍋子即可)

如果要做香酥排骨,油溫不要太高,要炸到熟透(用筷子戳看看,能穿過去即熟),若是要做成排骨酥湯則是不用熟透喔!
