紅燒獅子頭



材料:

300克 豬絞肉
10粒 鵪鶉蛋
一茶匙 蒜茸
半個 洋蔥- 切碎
五朵 冬菇 – 切碎
炸粉 適量

炸油:

調味料:

一湯匙 蠔油
半茶匙 油
一茶匙 胡椒粉
一小匙 五香粉
一湯匙 花雕酒
少許 麻油
一茶匙 玉米粉

醬汁:

一碗 水
一湯匙 花雕酒
一湯匙 生抽
一茶匙 蠔油
一茶匙 胡椒粉
一湯匙 番茄醬
一茶匙 白糖
半茶匙 油

做法:

1) 將鵪鶉蛋洗淨後水煮熟,去殼備用。
2) 將豬絞肉,洋蔥碎,香菇碎 和以上調味料混合成肉餡。
3) 將適量肉餡放在手掌中,將一粒鵪鶉蛋放在中間,包起來。
4) 然後用手掌的力紮緊,讓肉紮實。
5) 完成全部後,放入冰箱冷藏兩個小時,後拿出來在搓成圓形,使得更圓。
6) 粘上粉,小火慢炸至金黃,撈起瀝乾油。
7) 留下少許油,爆香蒜茸,將調好的醬汁倒入鍋裡,再將炸好的獅子頭入鍋,蓋起鍋蓋,中火,煮至吸乾醬汁即可。
