芒果慕斯蛋糕




材料:(6吋慕斯模1個,6吋蛋糕底盤1個)

A.餅乾底

發酵奶油(無鹽)    50 g
Oreo餅乾粉          90 g

B.乳酪慕斯

芒果泥             100 g
白砂糖                   75 g
奶油乳酪             150 g
明膠片(吉利丁)      6 g 
檸檬汁                  10 g
動物性鮮奶油   150 g

C.鏡面材料

芒果汁       100 g
明膠片(吉利丁)    4 g 

D. 裝飾材料

新鮮芒果           6顆
擠花用鮮奶油   適量 


做法:

餅乾底

1. A材料的奶油放置室溫軟化後倒入餅乾粉內,攪拌均勻。
2. 鋪平模型底部
3. 放入冰箱冷藏備用。

慕斯材料

4. 奶油起司放置室溫軟化後先以打蛋器攪拌至柔滑狀。
5. 接著倒入砂糖,攪拌至感覺糖融化。
6. 將芒果蓉分3~4次加入,也就是每加一點、攪拌均勻,再加果蓉攪拌均勻。
7. 加入檸檬汁攪拌。
8. 完全攪拌均勻後, 取出隔溫水泡溶化的明膠, 這時一同先將冷藏備用的鮮奶油取出,也將鋪了餅乾底的模型取出放置一旁。
9. 將明膠倒入材料內後迅速攪拌均勻。
10. 最後分2次加入鮮奶油,第一次加入後攪拌出大理石紋即可,再加入剩餘的鮮奶油。
11. 將慕斯材料攪拌均勻至呈現柔和黃色狀,攪拌均勻後倒入模型內
12. 橡皮刮刀在表面輕拍使其平整,即可放入『冷凍』1小時使其凝固。

裝飾

18. 取出完全凝固的慕斯蛋糕,隨意裝飾便完成
