班蘭蛋糕



材料:麵糊: 蛋黃2個
細砂糖 30克
椰子油 60克
牛奶50克
檸檬汁10克
班蘭麵粉100克(需要過篩)


蛋白霜:

蛋白2個
細砂糖30克(分兩次加入蛋白)

做法:

1,烤箱預熱160度C 麵粉過篩

2,蛋黃放入盆中攪拌均勻再加入椰子油攪拌,加入牛奶攪拌,加入糖攪拌均勻, 再加入麵粉拌均勻

3,另取一盆倒入蛋白,以電動攪拌器打至起細泡後,加入1/2的糖及檸檬汁,繼續高速攪拌至泡沫更細緻後,加入剩下的細砂糖,高速攪拌至硬性發泡

4,取一半的蛋白霜放入(蛋黃糊)中,以刮刀以切拌的方式拌勻後,將混好的蛋黃糊倒入剩餘的蛋白霜中拌勻



5,倒入蛋糕模中,輕敲桌面幾下排出空氣,放入預熱好的烤箱以160度烤35-40分


6,蛋糕熟後,取出並立刻倒轉放,待涼後即可脫模食用
